Jasmine's 3 Bean Salad

This flavorful salad is pretty much the only thing I ate in college after becoming a vegetarian. I would make this up then separate in smaller sized containers to travel with me on the go. Super healthy and filling, and very easy to make!



Ingredients:

  • 1 can cannelloni beans, drained and rinsed

  • 1 can kidney beans, drained and rinsed

  • 1 can black beans, drained and rinsed

  • 1 can chickpeas, drained and rinsed

  • 1 cup chopped celery (optional)

  • 2 tbsp fresh or dried cilantro

  • Juice of 1/2 lemon

  • 1/4 cup apple cider vinegar

  • 2 tbsp olive oil

  • pinch of salt and pepper

  • pinch of garlic powder

Directions:

Toss all ingredients together in a bowl and that is it! Store in airtight container in fridge for up to 4 days. Enjoy! :)
